Cheeseburger Stuffed Bell Peppers (with a BBQ Twist)
Some weeks, the GF and I know we’re going to be running hard—long days, late dinners, and not a lot of creative energy left in the tank for fancy dinners. That’s when we batch these cheeseburger stuffed bell peppers. They reheat like a dream, they’re loaded with flavor, and best of all, they make it look like we really have our act together.
Plus, they’ve become a favorite in our house for one simple reason: they taste like a bacon cheeseburger wrapped in a sweet, roasted pepper shell. Weeknight meal prep, solved! What’s not to love?

Ingredients
- Ground beef (80/20 preferred)
- Kunert Cattle Company Burger Blend
- Onion (finely chopped)
- Garlic (optional extra, minced)
- Diced bacon
- Worcestershire sauce
- Tomato paste or ketchup
- Cooked white or brown rice
- Shredded cheddar or Colby Jack cheese
- Large bell peppers (halved and hollowed)
- Olive oil
Instructions
- Preheat oven to 375°F. Halve and core the bell peppers, drizzle with olive oil, and place in a baking dish.
- In a cast iron skillet, brown the ground beef with chopped onion and diced bacon until nearly cooked through.
- Stir in tomato paste, a splash of Worcestershire, and a generous shake of Burger Blend. Let it simmer until the mixture thickens slightly.
- Mix in cooked rice and a handful of shredded cheese, then spoon the filling into the pepper halves.
- Top with more cheese and bake for 20–25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
- Let cool slightly before serving—or portion into containers for easy meals all week.
